Lentil Balls : Boiled red lentils and bulgur wheat are added to mix of tomato paste, chopped onions caramelized in olive oil, thinly chopped fresh green onions and parsley. They all get the sense of the zesty taste with fresh lemon juice and spices while they are shaped. Yalanci Dolma 'Stuffed Veggie' : Rice, onions, pine nuts, and currants are cooked in olive oil with spices and wrapped in grape leaves or stuffed ingreen peppers. Blacksea Pide 'Hot Garnished Pita' : Mix of cooked ground beef and caramelized onions with spices OR mix of feta cheese and parsley is placed in a long rolled dough by hand and baked in hot oven while constantly brushed with butter on top. Lahmacun 'Turkish Pizza' : Mix of ground beef, crushed tomatoes, green pepper, parsley, garlic with spices is brushed on a thin circular dough rolled by hand and baked in a hot oven. Simit : It is a circular bread with sesame seeds. The characteristics of simit (size, crunchiness, etc.) tend to vary by region. Sosyete Mantisi 'High Society Ravioli' : Precooked small cut top sirloin beef, caramelized onions, green peppers, diced tomatoes are sauteed with spices and rolled together in a layer of yufka and baked slowly. For the final touch, mixture of yogurt, garlic and salt is poured on top of the roll accompanied by specially made tomato sauce. |
